Traditional Peanut Butter Cookies



* 1 1/4 cups flour, sift or stir before measuring
* 1/2 teaspoon salt
* 1 teaspoon baking powder
* 1/2 cup shortening
* 1/2 cup peanut butter
* 1/2 cup granulated sugar
* 1/2 cup light brown sugar, packed
* 1/2 teaspoon vanilla
* 1 egg

Sift together flour, salt, and baking powder; set aside. Cream shortening, peanut butter, and sugars; beat in vanilla and egg. Stir in flour mixture, blending well. Shape mixture into 3/4-inch balls; place on greased baking sheets. Flatten each cookie with the tines of a fork; dip fork in flour periodically to keep it from sticking to the peanut butter cookie dough.

Bake cookies at 375° for about 10 to 12 minutes or a little less if your oven tends to be hotter than normal.

Oreo Stuffed Chocolate Chip Cookies



2 sticks softened butter

3/4 Cup packed light brown sugar

1 Cup granulated sugar

2 large eggs

1 Tablespoon pure vanilla

3 1/2 Cups all purpose flour

1 teaspoon salt

1 teaspoon baking soda

10 oz bag chocolate chips

1 bag Oreo Cookies, I used the double stuff

Preheat oven to 350 degrees F. In a stand mixer cream butter and sugars until well combined. Add in eggs and vanilla until combined.

In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie.

Take another scoop of dough and place on bottom of Oreo Cookie. Seal edges together by pressing and cupping in hand until Oreo Cookie is enclosed with dough. Place Let cool for 5 minutes before transferring to cooling rack.



Makes about 2 dozen VERY LARGE Cookies

Chocolate Chip Cookies STUFFED w/Brownies



1 brownie mix

2 sticks softened butter

1 Cup granulated sugar

3/4 Cup packed light brown sugar

2 eggs

1 Tablespoon vanilla

3 1/2 Cup all purpose flour

1 teaspoon baking soda

2 Cups semi sweet chocolate chips



Preheat oven to 350 degrees F. Prepare brownie according to package directions. Let cool completely then cut into 1 1/2 inch squares. In my stand mixer, I beated the butter and sugars until light and fluffy. Add eggs and vanilla, continue to beat until well combined.



Then place flour, salt and baking soda into a bowl; mix to combine then add slowly to wet ingredients along with the chocolate chips. Place a large cookie scoopful of dough on top of a brownie square and another large scoop on the bottom.



Remove and let cool for 15 minutes before removing from baking sheet. Grab a tall glass of milk or a large cup of coffee and dig in and enjoy!





Gently press and enclose brownie with dough adding pinches more dough to cover sides if needed. Place 6 filled cookies onto a parchment or silpat lined baking sheet and bake for 18-22 minutes or until edges are golden brown.




It makes 12-16 VERY large cookies

Cookies!!

I just had to post these wonderful cookies that I make yesterday! Oh-man, and they were GOOOOOOOD! I have already posted the recipes before, so check them out and surprise your family with a "pre holiday treat" Baking cookies defiantly puts me in the Christmas mood! lol...now I just have to get through Thanksgiving first. hahaa

Sugar Cookies



This after noon Mckayla and I made these delicious sugar cookies! They were so fun to do and so good to eat - Try them...you'll like it! =)



This is my Grandma Eick's recipe...and it's wonderful!

3 1/2 cups of flour
1/4 teaspoon salt
1 teaspoon of baking powder
1 cup butter (room temp)
1 1/2 cups of sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract



1. Mix butter and sugar together well

2. Add/Mix together well eggs and vanilla

3. Mix together the flour, baking powder and salt together then add to the rest of the recipe.

4. Mix together very well and put in refrigerate for 30 minutes



Take out after 30 minutes and start cutting out your wonderful shapes!

Bake at *375 for 10-15 minutes and rest of a cooling rack before icing. Enjoy!!

Kai-lan's Fortune Cookies



Mckayla and I made these cookies that we saw on NickJr.com Makes up to 24 of these cookies.

2 Eggs Whites
3 Tbsp. Melted Butter
1/2 Cup Flour
1 Tsp. Corn Starch
1/2 Cup Sugar
1/4 Tsp. Almond Extract
Pinch of Salt
3 Tbsp. Water

1. Preheat the oven to 325°F. Spray several cookie sheets with vegetable cooking spray

2. Whisk the egg whites in a medium bowl. Add the remaining ingredients, whisking until smooth. Spoon a generous tablespoon of the mixture on a prepared cookie sheet. Spread the batter into a 3 1/2-inch circle. Place three circles on the sheet pan at a time about 2 inches apart.

3. Bake the cookies until golden brown, about 10 to 12 minutes. Transfer the cookie sheet to a wire rack. Working with one cookie at a time, fold it in half, bottom facing each other. Pull the ends downward over the rim of a glass to make the shape. Hold cookie in place for several seconds to keep the shape. Repeat with the other cookies. If they become too firm, place in the oven to reheat slightly. Repeat with the remaining batter.

These are the messages that we wrote to put in the cookies. Mckayla and I had a blast doing and more fun eating them...so did Daddy!

No Bake Cookies

This is a no bake cookie recipe that we really enjoy. There are somethings in the recipe that I had on hand that were organic and some that we not. Oh-well... =)

Like always when I make cookies Mckayla is my little helper. I guess this is one thing that her and I like to do...being in the kitchen. =)

What you will need:
2 Cups of Sugar
1/2 Cup of Butter
4 Tbsp. of Cocoa
1/2 Cup of Milk
Dash of Salt (make sure that you do the dash and not the kids..lol..)

Bring all to a boil.
Remove from heat and Add 3/4 cups of Peanut Butter (we use crunchy)
Add 3 Cups of Oat Meal and a 1 tsp. of Vanilla

Mix all together good - put little drops by spoon on wax paper (again, I guess the silicone sheets)
Let them cool for 30 minutes and store in air tight container or freeze for later use. And if your like our family...eat them right away! =D
