Pancake Breakfast Sliders



I just wanted to share really quick a new and cute little way that our family had our Tuesday morning breakfast. Since my husband is normally off on Tuesdays they have become almost our Saturdays for our family. Anyways, yesterday we made a quick and easy little breakfast that I thought that I would share.

1-2 beaten eggs (depending how many sliders you are making)
10 mini pancakes for 5 sliders
cheese slices (cut to fit your sliders)
5 mini sausage patties (which i made our own the night before, but you could always use store bought)

Put them all together and you get Breakfast Sliders! Yummy, with a capital Y!

Eggs, Cheese & Collared Green Buttito & Quesadilla


So today while getting ideas for lunch I thought that I should probably use some leftovers that we have in the refrigerator. So, I got the idea of course of making little burritos and quesadilla. And boy was it YUM-MY!!

First I started to fry up some 2 eggs (scrambled till done) and then throw in my left over ham, collared greens and salt/pepper to taste. Take it out let it rest for a few minutes while you brown your soft shell taco and then add your filling and top it with your favorite graded cheese. I used cheddar cheese of course.


For the kids I did little burritos and didn't add that much filling and more cheese.


For me of course, I added more filling and less cheese. :)


Turned out pretty good. Looked great and tasted better! This is one of my favorite way to get my kids eating their greens. :)

My Breakfast Date



Happy Thursday Everyone!! This morning we woke up to a yucky raining day. So I thought that today would be a good day to get updated on some good tasty foods and see what craziness I can stir up in the kitchen. For starters, this morning my son and I made this amazing little egg, cheese and turkey quesadilla for him. He absolutely loved it and ate half of mine. But, of course...he eats "almost" anything so it's no surprise there! Since this was his, he likes eating just plain shredded cheese. So he had dollop of cream cheese and a size of shredded cheese. :)


Hope you enjoy this! This could be for breakfast, lunch or even a little snack. It's all up to you and what you like.



Here are your 5 ingredients you will need.


First start by brushing oil on both sides of your tortilla.


Brown both sides...not burn like I did the first time. :)


Then, with your already beaten eggs pour the eggs on to your tortilla. It's okay if it runs off, but try to get it to stay on top.


Then sprinkle your cheeses and place your meat, I used turkey.


Then right before you remove it off your pan, fold it in half to make your half moon shape. Pat it down a little to make sure it's all melted nice and remove for cooling. Cut it in half and serve to your speical breakfast date.


Mine this morning was my son..and he enjoyed every bite!

"It's never to late"


It's never too late for a nice hot breakfast! Well that's what my husband says at least. So, yes...last night I whipped up a batch of pancakes last night and eggs. Of course, I broke my rule last night and had myself a midnight breakfast! And it was good...very good. Not what you would expect all on top of each other like that...but it was nice!

Easy Rustic Breakfast

I am safe to say that every once in awhile I just need that hardy good easy rustic breakfast. One of my favorites is really just a slice of toast with a light lightly done over easy egg on top. It's simple just yet very satisfying! This morning I added just a little bit more to my plate. Three orange slices, small mix of roughly cut onion and ground sausage and a nice large of cup of coffee on the side (sorry not in picture)

Mornings like this make it all worth it...

Midnight Omelet for Two


Every once in awhile my husband and I will get a craving of something good in the kitchen. And yes, I am talking about good! :) So, the other night I decided to throw together something fun, easy and of course delicious! It's Midnight Omelet for Two! To be honest too, I have no idea what we throw in and how much. But never the less like all things, it seems to work out pretty well.

Plain Breakfast Egg Burrito



Here is a very yummy plain breakfast egg burrito that I made for the kids. They both loved them! lol... it was so fun to watch Connor attach the whole thing at once. lol..he's our growing boy!

For ONE:
1 egg
1 tablespoon of milk
1/2 cup of cheese
1 soft taco
salt & pepper to taste

Preperation/Cooking Time: 5-10 minutes total

Egg Sandwich Deluxe



With the homemade bread that I make, this is a mean looking egg sandwich that you should try!

2 slices of bread (homemade is amazing)
5 whole eggs (hard boiled - i also use fresh organic eggs)
2 tablespoons of mayo
1/2 teaspoon of paprika, or to taste

After boiling the eggs, let them rest in the refrigerater for about 30-45 minutes. Dice and mix in the mayo and paprika. Any type of chips and/pickle would work wonderful with this easy lunch.

Homemade Egg Drop Soup

The other day we were feeling like some soup. And soup is what we were going to have. I looking in our pantry to find some Chinese chips that we had a few days before when we ordered out for supper. And it made me want some more...

So I searched Egg Drop Soup and found a few recipes. So I just combined a few together here and there and came up with this. It was a little more creamer than I wanted it, but it was still delicious!

Omelets

Yum Yum...Omelets! So lately, I have been really into making omelets! =)

This is just some things I throw in:
2 eggs
ham (left over from dinner)
diced onions
little garlic
diced potatoes
cheese
and salt and peper to taste

topping:
Cheese of course and Quinn's Mom's homemade salsa
