Thrown together Asian Meal/Lettuce Wraps with a Country Twist

Ok, so this last food recipe update was a really fun one to do. It was seriously just something that I throw together. lol...We had to leave at a certain time and I needed something very quick, easy and of course fun for the kids to eat. I don't even know what to call it..."Thrown together Asian Meal/Lettuce Wraps with a Country Twist"...I don't know! lol...

What is it?
It's White Rice, Fried Carrots, Onions & Garlic, Rice Noodles with sliced Venison.
We also used Lettuce for Lettuce Wraps if you want to make it really fun. Mckayla absolutely loved it!!




Mama Mast Potato Salad

This isn't your everyday Potato Salad. Here's what you do...

First, depending on how much potatoes you will be using hard boil your eggs. Good tip is to do them the day before and have them already cooled off. But its up to you.

Then boil your Potatoes, let them rest for about 1-2 hours till they cool off enough for you to handle, then peel the skin. Once you peel the skin, grate your Potatoes - I use a box grader.


Just be careful you don't grade your fingers and hand!



The eggs that you boiled either the day before or a few hours before cut them into pieces looking like this:



Then throw them with your already graded potatoes. Also, a good key is to make sure you do all of this all together, if you grade your potatoes way before hand they will start turning brown and that's not pretty for anyone to eat. If it does, its okay - still taste the same, just doesn't look the same.



And again, I hardly measure...but once all this is down than you add your salad dressing. It just has a different taste to it, again, you can use whatever you have in your frig. I also, add about 1/2 tablespoon of apple cider vinegar. But again, if you do not like that then don't add it.


This is a mustard free potato salad. Enjoy and tell me what you think.

Baked Potatoes, Carrots and Onions Side Dish

This is another side dish that I throw together it a hurry. Nothing special, just shows you that you can take another you have, through it together and presto..you got half your dinner!



Stuffed Pork

This is one of my favorite ways to stuff pork or chicken. It's the best!! Here are a few pictures when I used Pork instead of Chicken this time.

Cookies!!

I just had to post these wonderful cookies that I make yesterday! Oh-man, and they were GOOOOOOOD! I have already posted the recipes before, so check them out and surprise your family with a "pre holiday treat" Baking cookies defiantly puts me in the Christmas mood! lol...now I just have to get through Thanksgiving first. hahaa


Beautiful Blooming Onion

This Beautiful Home style Blooming Onion was the best! This again, was something that I was playing with in my little coffee kitchen. I just love to mix up spices...a dash of this with a pinch of that and throw it together and have a ball!! lol..Well, kind of like that.



I took a large onion and cut not quite to the core. Make sure its all together and that you DO NOT cut through the onion. Then I dipped it in some organic butter milk (let it set for about 10-15 minutes). After soaking in butter milk, then toss it in your flour mixture. I use: flour, corn flour, paprika, salt and pepper. Make sure the whole onion is cover - check in between each layer as well. The key is to coat EVERYTHING. Then fry your onion - right side up. Make sure the layers are spread apart. (I use organic peanut oil - but you can use whatever you have in your pantry)

Then once it starts to float to the top its done. Take out - very carefully, and let it rest on a cooling rack (covered with paper towels) to soak up the remaining oil.

Throw Together Casserole

This was a all in one pot, Throw Together Casserole. And boy, was it just thrown together. lol..



This is what I added:
Pork, Peas, Onions, Carrots, Homemade Bread Crumbs, Cheese and of course...Salt and Pepper to taste

Weekend w/Family & Pictures of the Kids

Getting ready to have a fun few days with family!!! It's been a busy few days. But again, it's been a good busy - as always. Tuesday and Wednesday Quinn's sister was here to have her Tupperware party that I hosted. It was great! We had a lot of fun and yes of course..I got snags. I am loving this Tupperware! Today we are waiting the visit of my Jimmy and Debbie! The kids...are so excited! They will be here for just a few days. Tomorrow we will have Mckayla's soccer game in the morning and then leave straight from there to Highland Retreat for Caia's birthday party. My other brother Nevin and Christina little girl will be turning 3 on the 7th so they are having her party this weekend. They are camping all weekend. We wish we could be there too...but it was too much with soccer and then church on Sunday that we need to be at. But at least we get to spend Saturday with them and the rest of the Mast cousins that can be there. It's going to be so much fun! We can't wait!!

Since we have a new camera I have been taking pictures like crazy. Here are a few pictures of the kids. Hope you enjoy! Their getting so big so fast - can't they stay little babies forever?!

Rice Noddles w/Vegetables and Pork

Here is a fast dinner that I just whipped up in minutes. And really it was minutes. Quinn was on his way home from work and needed to leave again less than 45 minutes after for a meeting. So I didn't have much time. But it tasted very good to say the least. If I can do it...so you can you! Try it and let me know what you think.

This is what I used and did:

First thing is I boiled water and then soaked my rice noddles for about 7 minutes and then let them drain.

- Scramble eggs, I use organic as always, but you can use whatever you have. Set aside for later use.

- Cut and fry your pork, you can also you beef, chicken or shrimp
- Cut onions
- Peas
- Carrots and little baby corn

Stir fry them all together, throw some soy souce, salt and pepper to taste. Then throw in your noddles, let them merry together for a little bit and then serve for some goodness!

It was that easy!


Sight & Sound

Quinn and I took some time out for ourselves the other night and went to see "In the Beginning" by Sight & Sound. It was amazing! It was our first time seeing any of their shows and hopefully will not be the last.

It's almost Friday

It's almost Friday...45 minutes and counting down!

I thought that while I was waiting on some wash to get done that I would update and get some much needed blogging done. Wow, where do I begin?

Last month went by like a whirlwind it seems. I don't even know where to begin and end...it went by that fast. But many memories and great times with family that is for sure.

In September, My sister in law and their two girls came to visit. We kept the girls for a few days while she went outside of DC to be there for her best friend that was having a little girl. Mckayla and Connor had a great time with them. It was so nice to have them here with us for a little bit. And spend time with my sister in law as well. Quinn and I were able to get in a date night which was wonderful while she was here! That a lone so nice and very much needed!

I have done lots of different recipes that I am wanting to post on here for everyone. So be sure to look for them soon. With the new camera that we have, the pictures are super perfect. It's my new baby! ;)

Driving Out to CO and Back!

Wow, has it been awhile! So I thought that I would update everything by the events instead of writing one looong blog.

Well I guess I can start off my our very long but yet short trip to CO. We left on a Weds. late afternoon and got to Indina in the early AM and then spent the night there at Quinn's brother's apartment and then left in the noon time and drive to CO. And boy it was a long time driving, but good drive all at the same time. The kids did WONDERFUL! Praise God! lol...since we drove most of the time at the night time the kids slept through most of it. But the times they were awake, we made it fun for them. We had little gifts here and there for Mckayla to open up every 3-5 hours. So that made the trip a lot more interesting for her at least. And Connor, well...he just enjoyed looking out of the window, watching Thomas the Train & Bob the Builder and looking at his books that we brought. At this age he was pretty simple to entertain him. Since we have a mini van it was nice that Mckayla was able to have the whole backseat. So that was wonderful and enjoyable for her. Every once in a while Quinn or I would sit back there with her to watch a movie, play a game or color. All in all on the way out there and the way back was a great first famil road trip.
