Pancake Breakfast Sliders

I just wanted to share really quick a new and cute little way that our family had our Tuesday morning breakfast. Since my husband is normally off on Tuesdays they have become almost our Saturdays for our family. Anyways, yesterday we made a quick and easy little breakfast that I thought that I would share.

1-2 beaten eggs (depending how many sliders you are making)
10 mini pancakes for 5 sliders
cheese slices (cut to fit your sliders)
5 mini sausage patties (which i made our own the night before, but you could always use store bought)

Put them all together and you get Breakfast Sliders! Yummy, with a capital Y!

Enjoy!

Banana Bites

This oh so yummy breakfast is a favorite at our house right now, Banana Bites!

1-2 Bananas, depending who and many many you are serving.

1 Cup Pancake Batter (Your favorite boxed brand)

**You can use maple syrup, yogurt or even honey to drunks theses bites in. Be creative and have fun. Not only will the kids think it's great...so will you!

First take your Bananas(1-2) and cut them at a bias. So that their a little easier for the kids to pick up...and they look prettier too. :)

Then you dunk your bananas in your pancake mixture. It would be wonderful with a whole wheat pancake mixture if you had it. Then shaking off the excess batter into the bowl and place on a buttered griddle or skillet over medium heat. Letting them golden brown ob both sides.

"It's never to late"

It's never too late for a nice hot breakfast! Well that's what my husband says at least. So, yes...last night I whipped up a batch of pancakes last night and eggs. Of course, I broke my rule last night and had myself a midnight breakfast! And it was good...very good. Not what you would expect all on top of each other like that...but it was nice!

Can you tell....

Pancakes & Gravy

Tribute to Uncle Dan Smucker...

When Quinn and I would go up to Harrisonburg and stay with Uncle Dan he would make breakfast for us. And yes, this is what we would normally have...Pancakes & Gravy.

This was the very first time I had ever had it fixed this way. We were always used to biscuits and Gravy. Not at Uncle Dan's, you would get a special treat. I am going to miss him. And we are going to miss his laugh at family get together and miss visiting him when we are in Harrisonburg. It's just not the same...

There are so many memories though and this is one of the many that I wanted to share. To Uncle Dan...

This is the pancake recipe that I like to use...but you can use your own pancake recipe that you choose. It's just as good. =)

Pancakes:

Makes about 8 (5-inch) pancakes: 4 servings

1 cup organic whole wheat flour
1 tablespoon organic cane sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 cup organic milk
2 tablespoons expeller pressed canola oil.

Sausage Gravy:

In the fry up your sausage and place in dish (I like to use my cast iron pans)
In the grease, age 2 tablespoons of flower
Mix together
Then add your milk
Whisk together and add in your sausage.

You will need to mix together till it gets to a gravy like consistency. 5 minutes more or less.
